raw snickers slice! I make this slice every Saturday morning for school and work lunch boxes and more often than not it is gone by the time I make the lunches for Monday!
Ingredients -
bottom layer
2 1/2 cups unsalted peanuts
1/2 cup rice malt syrup
middle layer
2 1/2 cups medjool dates
3 tablespoons coconut oil
top layer
3 tablespoons melted coconut oil
3 tablespoons rice malt syrup
1 tablespoon cacao powder
Method -
1. In a food processor, begin blending the peanuts until it forms a peanut butter. Then add in rice malt syrup and continue blitzing until well combined and a thicker consistency than it was to begin with. Once combined, press mixture into a slice tin and put it in the freezer while you prepare the next layer.
2. For the second layer, put the dates and coconut oil into a food processor and blend until it becomes a smooth caramel. This may take up to 5 minutes. Once smooth, spread the caramel mixture over top of the peanut butter layer and pop it back into the freezer.
3. In a microwave proof bowl, melt together the coconut oil and rice malt syrup. Once melted, take out of the microwave, add in the cacao powder and whisk tog
ether with a fork or whisk. Once combined, pour the chocolate mix over top of the caramel layer. Freeze the slice for at least 2 hours before serving to ensure it has harden up enough!
