BANANA LOADED DESSERT

so.. I was making another batch of my snickers slice and thought to myself 'hmm these layers would taste good sprinkled over some chocolate banana nice cream' so what did I do..? saved some of each of the layers (peanut butter, caramel) and did just that, plus one of my banana muffins and some fresh banana!

ingredients -

banana nice cream

1 1/2 frozen bananas

1 tablespoon rice malt syrup

a dash of almond milk (to help blend)

1 teaspoon cacao powder

peanut butter

2/3 cups of unsalted peanuts

1 tablespoon rice malt syrup

caramel

1/2 cup dates

1 teaspoon vanilla essence

banana muffin (makes 6)

2 ripe bananas

1/2 cup rice malt syrup

2 flaxseed eggs

1 teaspoon baking powder

1 teaspoon baking soda

1 cup crushed walnuts

2 teaspoons cinnamon

1 cup brown rice flour

crushed macadamias (for top)

2 tablespoons coconut sugar (for top)

cinnamon (for top)

Method -

1. Firstly make the peanut butter and caramel mixtures. For both of these add the ingredients to make the elements into a food processor and blend until smooth.

2. I had made the banana muffins the previous day. To do this, mash the bananas in a large mixing bowl before adding in the rest of the ingredients and mixing well to combine. Spoon the mixture evenly between a 6 cup muffin tin and sprinkle over crushed macadamias, coconut sugar and extra cinnamon. bake in a 120 degrees (Celsius) oven for about 15 minutes, until firm to the touch.

3. To make the banana nice cream, add all ingredients to a food processor and blend until smooth and resembles soft serve ice cream. 4. Put the nice cream and muffin into a bowl and then sprinkle over the peanut butter, add the caramel and serve with fresh banana.
