VEGAN SMOKEY TOMATO PASTA

yummy wholemeal pasta with smokey tomato sauce! Perfect dish for dinner with friends, simple to make yet very tasty and fun to eat!

Ingredients -

1 large tin diced tomatoes

1 large red onion

4 cloves garlic

2 teaspoons sweet paprika

1 teaspoon cinnamon

3 teaspoons coconut sugar

handful spinach

1 bunch broccoli florets

2 cups vegetable stock

salt

pepper

pasta of choice (I used wholemeal spaghetti)

Method-

1. put the pasta on the stove in a pot of water. Bring to the boil to cook the pasta (check ingredients on pasta to ensure it does not contain egg).

2. While the pasta is cooking, in a large, deep pan, cook the onions, garlic, spices, coconut sugar, salt and pepper for about 5-8 minutes until the onion is cooked through.

3. Once the onion is cooked, tip in the tin of tomatoes and add in the vegetable stock. Let the sauce simmer for 5 minutes before adding in the spinach and broccoli. Let this simmer for a further 10 minutes to allow the vegetables to properly cook.

4. To serve, add the cooked spaghetti into a bowl and top with the sauce and a sprinkle of nutritional yeast!
