SPICY VEGAN WONTON SOUP

Asian cuisine is by far one of my favourite types of food, both flavour wise and to cook! I would consider my Spicy Wonton Soup to be the perfect dinner, especially on a chilly evening when you need a warm up!

Ingredients -

dumplings..

1/2 a wombok chopped (Chinese cabbage)

1 grated carrot

10 button mushrooms coarsely chopped

2 red chillies finely chopped

1 grated pear

1/2 bunch spring onions chopped

1 cup plain flour

2 tablespoons cornflour

warm water

spicy broth..

3 cups vegetable stock

1 tablespoon coconut sugar

1 tablespoon soy sauce

1/2 bunch spring onion

1 brown onion

4 gloves garlic

1 teaspoon ginger paste

2 red chillies

Method -

1. To make the wonton wrappers, add the 2 different flour varieties into a bowl and mix them together. Add to the flour enough warm water to make a thin dough and then turn the mixture out onto a lightly floured surface. Sprinkle some more plain flour onto the dough and begin to knead. Continue adding extra plain flour and kneading it in until you reach a consistency at which you are able to roll the dough into a ball. set the dough aside while you make your dumpling filling and broth.

2. In a pan, add all of the dumpling ingredients apart from the flours and water. Saute the vegetables until they combine and if you like, ad in a splash of soy sauce for extra flavour. Once the vegetables have been cooking for 5-10 minutes add in 2 tablespoons of water and cover for a further 4 minutes, after 4 minutes, the pear should have stewed and pureed, mix this through and then transfer vegetable mixture to a bowl. This is the dumpling filling.

3. In a separate pot bring the vegetable stock to the boil and add in the coconut sugar and chopped spring onion. While this is boiling, in a food processor add the onion, chillies, garlic and ginger paste. Pulse these ingredients together until the form a rough paste. Once a paste is formed, transfer into a fry pan and cook for approximately 2 minutes before adding this to the broth.

4. Cut the wonton wrapper dough into 10-12 evenly sized pieces. Roll the small pieces out into thin circular shapes and then use a tablespoon to spoon vegetable mixture into the centre of each dough disc. Fold wrapper over top of mixture and press it back onto itself using your fingers. Stand dumpling upright and sit in a bamboo steamer. Continue with rest of the dumplings.

5. To cook the dumplings, place the bamboo steamer on top of the pot full of broth and place the bamboo steamer lid on top. The steam from the broth will cook the dumplings within 5-10 minutes.

6. To serve, put the dumplings into a bowl, pour over the broth and then add a dash of soy sauce over top!
