VEGAN SUPERFOOD BURGER

my superfood veggie burger is the goods! The patty is packed full of all sorts of superfoods, beetroot, quinoa, flaxseeds, chia seeds, all that yummy stuff!

Ingredients -

Patties -

1 beetroot, steamed and pureed

1 cup cooked quinoa

1/2 cup spelt flour

2 flaxseed eggs

1 tablespoon chia seeds

Salt and pepper

Toppings -

I used guacamole, spinach, pineapple, grated carrot, flat mushroom marinated in chilli sauce and peanut oil and caramelised onions

Bread roll -

mine in a wholemeal vegan sourdough bun

Method -

1. Mix all of the patty ingredients together until combined then divide and form into patty shapes. Cook in a non stick pan with a tiny amount of coconut oil if you like.

2. layer toppings and patty onto the bun however you desire.
