RAW VEGAN COOKIE DOUGH BALLS

One of my favourite foods back in the unhealthy days used to be cookie dough. I used to tell my Mum I was making cookies, make a double batch of dough and eat half of it. Times have changed since then and so has my appreciation for a healthy diet, although sometimes I do still crave that sweet doughy goodness, so I have come up with a recipe for a healthier version! Super simple and super good and also great as a sweet snack or a treat in your lunch box!

ingredients -
10 pitted and soaked dates
1/2 cup coconut sugar
2 tablespoons rice malt syrup
1/2 cup almond meal
1/2 cup buckwheat floor
1/4 cup quinoa flakes
2 tablespoons cacao or cocoa powder
3-4 tablespoons almond or coconut milk
1/2 cup chia seeds or seed mix for rolling
method -
1. Add all of the dry ingredients into a food processor and blitz until they are well combined. From here add in the wet ingredients and blitz until it forms a dough consistency.
2. Put the chia seeds onto a plate. Roll dough mixture into a bite sized ball and then roll the ball through the seeds until it is covered. Refrigerate for 20-30 minutes and then enjoy!
